Baked salmon with spinach and leeks


Here’s my latest clean eating recipe, why not have a go tonight. It’s full of ingredients that will flood your body full of nutrients that will compliment any training programme.



Serves 2

2 leeks, washed, trimmed and sliced

250g fresh baby leaf spinach

2 salmon fillets

¬Ĺ tbsp olive oil

1 garlic clove finely chopped

1 tsp ginger

Juice of half a lemon



1. Preheat oven to 200c/gas mark 6

2. Gently boil or steam the leeks to soften

3. Place the spinach leaves in a medium-sized baking tin and top with the leeks. Place the salmon on top

4. Mix together with the oil, garlic and ginger and brush over the salmon. Pour over the lemon juice.

5. Place in the oven and bake for 10 minutes. Remove and allow resting for 5 minutes. Serve with a selection of vegetables
